1 cup cottage cheese

3 eggs

1 cup rolled oats

1 tsp vanilla extract

1 Tbsp honey or sugar (optional)

2 tsp baking powder

Pinch of salt
For serving:

Fresh blueberries

Greek yogurt
-
Maple syrup
Instructions

Add all ingredients to a blender or food processor. Pulse until smooth (about 30 seconds). Do not overmix.

Heat a lightly greased skillet over medium heat.

Pour batter into small pancakes. Cook 2–3 minutes per side, until golden.

Serve with berries, yogurt, or syrup.
