Blueberry Pancakes with Cottage Cheese

Ingredients

  • 1 cup cottage cheese

  • 3 eggs

  • 1 cup rolled oats

  • 1 tsp vanilla extract

  • 1 Tbsp honey or sugar (optional)

  • 2 tsp baking powder

  • Pinch of salt

For serving:

  • Fresh blueberries

  • Greek yogurt

  • Maple syrup

Instructions

  1. Add all ingredients to a blender or food processor. Pulse until smooth (about 30 seconds). Do not overmix.

  2. Heat a lightly greased skillet over medium heat.

  3. Pour batter into small pancakes. Cook 2–3 minutes per side, until golden.

  4. Serve with berries, yogurt, or syrup.

They’ll just think they’re pancakes. You’ll know better.
